⅓ cup sour cream
1 cup shredded
mozzarella cheese
¼ tsp. salt
¼ tsp. black pepper
¼ tsp. butter
2 Tbsp. minced fresh basil
1. Whisk eggs and sour cream
in a bowl until creamy and smooth.
Stir in cheese and season with
salt and pepper.
2. Melt butter in a large skillet
over medium heat. Pour in egg
mixture; cook, gently folding
occasionally with a spatula, until
eggs reach desired consistency,
about 3 minutes. Fold in basil
during the last minute of cooking, or
sprinkle on just before serving.
