½ cup chopped onion
6 cloves garlic, coarsely
chopped
1 cup fresh orange juice
½ cup fresh lime juice
¼ cup chopped fresh cilantro
2 tsp. hot sauce
1 tsp. kosher salt
1 tsp. black pepper
1 tsp. dried oregano
½ tsp. cayenne pepper
½ tsp. cumin
½ tsp. lemon-pepper seasoning
1 cup olive oil
1. Pulse onion and garlic in a
blender or food processor until
very finely chopped. Add orange
and lime juices, cilantro, hot
sauce, salt, black pepper, oregano,
cayenne, cumin, and lemon-
pepper seasoning. Blend until
well incorporated. With blender
running, gradually pour in oil,
blending until smooth.
2. Using 1 cup marinade per 1 to
1½ lb. meat, add marinade and
meat to a large zip-top plastic
